These cookies were created by our P&C Manager, Kristel McNeil, which she brought to the office the other morning to share.

  • 1 c. all-purpose flour
  • 1 tsp. baking soda
  • ¾ c margarine (softened)
  • ½ c sugar
  • ½ c brown sugar
  • 1 egg
  • 2 ½ c rolled oats
  • 1 tsp vanilla
  • 1 package of cherry flavored Craisins
  • 1 ½ c white chocolate chips

In a small bowl, stir together flour and soda; set aside. In a large bowl, beat margarine, on medium speed for 30 seconds. Add sugar and beat until fluffy. Add egg and vanilla; beat well. Add flour mixture and beat until well mixed. Stir in oats, craisins, and white chocolate chips. Drop by rounded tablespoon 3 inches apart on an ungreased cooking sheet. Flatten slightly.

Bake at 375 for 10 to 12 minutes. Cool on rack. ENJOY!
