Recipe: Ken’s Jalapeno Cornbread

KEN’s JALAPENO CORNBREAD

Ingredients

  • 2 boxes Jiffy Cornbread Mix
  • 2 eggs
  • 2/3 c. milk
  • 1 12oz jar sliced jalapenos – diced (reserve 15 slices for garnish)
  • 16 oz mild grated cheddar cheese
  • 1 cup sugar

Instructions

  • 1. PREHEAT oven to 400 degrees
  • 2. GREASE  9×13 glass baking dish
  • 3. MIX 2 boxes of Jiffy cornbread mix with eggs, milk and sugar
  • 4. ADD jar of jalapenos with juice
  • 5. FOLD IN grated cheese
  • 6. POUR into glass dish
  • 7. ADD jalapeno slices to the top
  • 8. POUR into baking dish and cover with aluminum foil
  • 9. BAKE 45 minutes
  • 10. UNCOVER and bake additional 5-10  (until toothpick inserted in center comes out clean)

Allow to cool in pan 10 minutes and then slice and enjoy warm!
