Low Country Collard Greens

This week we bring you a southern classic, courtesy of Commercial Auto Underwriter Chase Mitchell!

Straight from the Carolina coast, it’s hard to resist a good plate of collard greens and cornbread!

Low Country Collard Greens

Ingredients

  • 2 Minced Garlic Cloves
  • 1/2 lb. raw bacon, chopped
  • 3 Cups Chicken Stock
  • 3 Cups Water
  • 2 cups apple cider vinegar
  • 5-6 dashes of hot sauce
  • 1/2 cup sugar
  • 1/4 cup salt
  • 3 lbs. collard greens, cleaned, chopped, and stems removed

Directions

  1. In a large pot over medium-high heat
  2. Add garlic and bacon, cook down for five minutes.
  3. Add the remaining ingredients, except collards.
  4. Bring to a boil and add the collards.
  5. Bring back to boil, then reduce to a simmer.
  6. Cook until tender (roughly 1.5 hours) stirring occasionally.
